Meet Our Master Chef

Chef Anandan Nair
Master Chef Kerala Cuisine
A well rounded chef worked with premium five star hotels for more than 30 years. Started career as a personal chef for Late Krishnan Nair, Chairman Leela group of hotels and later promoted as Kerala speciality chef for Leela Kempinski Mumbai. He had the opportunity of serving who is who of the country. Worked for 10 years at Leela Mumbai and taken up the position at Leela Goa as sous chef Indian Cuisine.
Anandan Nair has been the face of Kerala cuisine at the Leela group of hotels, he has been part of pre-opening task force for Leela Bangalore and Leela Delhi to Standardise the South Indian food and recipes. He is trained in Ayurvedic food preparation too. Anandan Nair conducted numerous Food promotions at The Leela group of hotels across India.
He was chosen to lead the Indian food promotion at the Arabella Grand Hotel in Frankfurt Germany in 1996.
Chef Anandan Nair’s strength lies in authentic regional food of Kerala which include sadhya meals. He has handled multiple high profile weddings.
Currently working at Sandalwood restaurant as Executive chef and prior to this, he was heading the Banquet kitchen at Lulu convention centre Thrissur, catering large weddings and conventions.

Chef Gireesh Kumar. T V.
Professional specialization in the field of food and beverage management with 2 decades of hands on experience in diversified portfolio of hotel brands which include Leela Kempinsky, Jw Marriott and Jumeirrah international Dubai. Gold and Bronze medal winner at the international Salon Culinaire food presentation held at Dubai. Previous position held include Executive chef at Marriott hotels Chennai and Pune and last position held was in the capacity of Director food and beverage at Lemeridien Kochi responsible for the entire food and beverage department. Pre opening expert participated in opening multiple properties of Marriott in India which include JW Marriott Juhu, JW Marriott Sahar Mumbai, Courtyard Marriott Pune and Bhopal and Fairfield Inn by Marriott at Belagavi

Chef Justin Paul
With Chef Paul at the helm, The Golden Peacock became the first Indian restaurant to be awarded a Michelin Star in Asia. In a career spanning 20 years, Chef Paul has worked at some of the most superlative restaurants in Asia, including Veda, the Hyatt Regency, Jashan Fine Dining Restaurant, all in Hong Kong, and at The Marriott Resort and The Leela Palace in Goa.
Born in the Southern Indian state of Kerala, Chef Paul is based in Macau. Under the tutelage of his late father, he developed an innate appreciation for the culinary dexterity and the rich flavours and traditions of Indian cuisine from a young age. Always eager to experiment, he pushes boundaries and combines traditional Indian recipes with global techniques to create awe-inspiring dishes.
